Single Varietals vs. Blends

Single Varietals: Crafted from a single type of olive (such as Italian Frantoio, Greek, Koroneiki, or Tunisian Chemlali), single varietals highlight the unblended, distinct characteristics of that specific fruit. They offer a pure expression of a single cultivar’s flavor profile, highlighting specific notes of fruitiness, bitterness, and pungency.

Blends: Expertly married combinations of multiple varietals designed to create a complex, harmonious, and balanced flavor profile. Much like a classic Bordeaux wine blend, our master millers combine different cultivars to ensure consistency, depth, and a complete sensory experience in every bottle. *Most of our olives are harvested from our own estate groves. However, to craft Athena’s Blend, we occasionally source specific varietals from trusted family farms. Can a Co-Milled Oil Be Extra Virgin? What’s the Difference?
Reality Check: No.
Furthermore, it is misleading and illegal to claim infused oils. or co-milled oils are extra virgin olive oil.
True co-milled oils —such as our estate citrus oils are made by milling fresh whole fruit (like Meyer lemons or peppers) simultaneously with olives—are crafted entirely from mechanically extracted fruit. However, strict international olive oil standards define Extra Virgin Olive Oil as the pure juice of the olive fruit alone (Source: International Olive Council and Source: Olive Oil Commission of California) Because co-milled oils incorporate other botanicals or fruits into the oils, they fall under specialty or flavored culinary oils rather than standard 100% olive varietal EVOO, even though they utilize the same pristine, mechanical milling process.
Our Co-milled oils are a chef’s ‘secret weapons’ because, unlike infused oils, which add botanicals, flavors, and materials after the milling process, we incorporate the entire fruit in the oil from its very inception–ensuring your oils take on ALL of the intricate flavors of the fruit and herbs.
