Our First Soiree at the Olive House

On June 5th 2011, Il Fiorello held our inaugural event at the Olive House for the North Bay Hospice charity dinner.  The dinner was purchased graciously by Ben Huber for himself and 7 other guests at the Wine and Food Jubilee auction.  All proceeds for this dinner went to the North Bay Hospice Center.  Chef Peter Garcia from Ahi’s Seafood and Chop House at the Hilton Fairfield, his sous chef Rachel Medeiros, and the Sievers family catered the 7-course dinner at the Olive House.  The chairman of the Wine and Food Jubliee, Chris Sweeny, and his wife Jocelyn donated their time as servers for the dinner as well as Mark Sievers, co-owner of Il Fiorello.   With the finishing touches put in the Olive House just a few weeks prior; everyone was eager to test out all the new equipment in the commercial kitchen.

Appetizers : Sievers Family

Dried apricot topped with herb cheese and toasted walnut

Asian pear, parmesan cheese, and balsamic vinegar trio

Salmon Gravlax with crème fraiche

Wine Pairing : Wooden Valley Sauvignon Blanc 2010

 

First Course : Chef Peter Garcia

Ginger Crab Napoleon

Wine Pairing : Sugiyama Estate Chardonnay 2010

 

Second Course: Chef Peter Garcia

Warm duck confit salad with pear, wild mushroom, glazed walnuts and mustard vinaigrette

Wine Pairing: Senders Russian River Pinot Noir 2006

 

Palate Cleanser: Sievers Family

Green Apple Sorbet

 

Main Course: Chef Peter Garcia

Coffee Crusted Rack of Lamb w/dark Chocolate Demi Glaze, Blue Cheese Duchess Potato and Baby Vegetables

Wine Pairing : Rockcreek Vineyards Cabernet Dal Cuore Estate Grown 2008

 

Cheese Course: Sievers Family

Gorgonzola, Triple Cream, and 3 month aged Manchengo with quince paste, marcona almonds, and toasted bread

 

Dessert:

Chef Peter Garcia: Limoncella Tiramisu with Rasberry Coulis

Sievers Family : Chocolate Truffles

Paired with Limoncello made by Ann Sievers

 

Breakfast Gift:

Polenta Citrus Olive Oil Cake

 

Needless to say, the guests were stuffed at the end of the evening and probably didn’t eat at all the next day,  yet walked out of the dinner with rave reviews of the food and service.  The kitchen ran smoothly, the weather cooperated, and the event was a major success for the inaugural dinner.
