2 cups zucchini grated (and drained)
2 eggs whisked
½ yellow onion finely diced
½ cup parmesan grated
½ cup bread crumbs seasoned
¼ cup Leccino Extra Virgin Olive Oil
2 tsp Salt
2 tsp Pepper
Red pepper flakes (amount to your taste) 1-2 teaspoons
Or 2 tsp Harissa Spice
Herbs as desired, chives, basil, oregano
For service, sour cream and chopped herbs, chives are the best.
Preheat oven to 400°F.
Use a nonstick muffin tin or a non-stick spray and set aside.
Grate the zucchini, sprinkle with salt and let it drain. Alternately squeeze in a dish towel to remove excess water.
Combine, the eggs, onions, cheese, bread crumbs, drained zucchini, salt, pepper and seasonings.
Fill your muffin tins with the combined mixture
Bake at 400° F for about 18 minutes. More or less depending on the size of the muffin tin.
Serve warm with a dollop of sour cream and sprinkle with chopped chives.
